Saint's Super-Bowl Pizza


In Honor of the Saints wining Super -Bowl 44, I'm naming this years special dish, Saint's Super-Bowl pizza. Every Super-Bowl I try to cook something special and this year it's gluten/wheat/dairy/top-8 free pizza. This pizza is also low-cholesterol and vegetarian/vegan.

Her recipe calls for Ener-G Egg Replacer which are made from soy. You can use flax seeds as a nice substitute:

Flax Seeds Egg Substitute:

1 Tablespoon flax seeds plus 3 Tablespoons water replaces one egg. Finely grind 1 tablespoon whole flaxseeds in a blender or coffee grinder, or use 2 1/2 tablespoons pre-ground flaxseeds. Transfer to a bowl and beat in 3 tablespoons of water using a whisk or fork. It will become very gooey and gelatinous, much like an egg white. In some recipes, you can leave the ground flax in the blender and add the other wet ingredients to it, thus saving you the extra step of the bowl.


If your not allergic to eggs, and want to lower the cholesterol just use egg whites, that works well too.

The pizza is topped with Red Pepper, Spinach, Artichoke hearts, and Mushrooms, and Onions.
